Being a highly nutritious food consumed by may people in the world , milk is processed and improved on the quality and value is added as cheese, yoghurt and milk powder. Processing of cheese requires a clean environment that is well ventilated and always don't share the processing area with fowls, animals and other non processing activities and don't leave young children or pets to play around processing area. The processing area should not be near a dump site, open garden, bush area or stagnant water.

Cheese processing

First, make sure you install a net in the processing area incase it is near a kraal to keep flies out of the area and always clean processing before processing. Sprinkle water on floor to prevent duct and make sure the process follows linear flow to prevent contamination and do not keep raw materials or fiished products directly on the floor instead keep them i=on raised plat forms.
Similarly, wear clean cloths and wash hands with soap and running water prior to processing and also observe the received milk and check for the acidity and temperature to make sure it is safe for processing. Before processing, clean the coagulant properly and use clean water to strain however dot deep fingers in the pot to check milk without washing with soap in water.
Wash all untensils after processing in 3 step by re rinsing, washing with soapy water and rinsing with clean water. use brush to scrab wooden basket and finally allow all utensils to air dry before storage.
