Baby corn and normal maize are two different maize varieties. Baby corn variety is a special variety that is grown solely to be harvested as baby corn, and if it matures beyond the baby corn level of harvesting it is not good for consumption.
If the baby corn matures beyond its level of harvesting, it becomes so sugary when roasted, and when it dries it becomes very hard for people using it to cook. Another difference between the baby corn and the normal maize variety is that the normal maize produces between 1-2 maize cobs. Baby corn on the other hand can be harvested severally as it produces up to ten cobs.
The baby corn is longer as compared to immature corn of the normal variety. If a farmer wants the baby corn, they have to buy the actual variety and not try to turn an immature normal maize variety into a baby corn; if they want the normal maize they should buy the actual variety and not try to grow the baby corn beyond its harvesting level.
